Former Balaban’s Chef Joins Pfoodman Team
(St. Louis) Dan Joyce, former chef at Balaban’s in the Central West End, has joined Pfoodman as Corporate Executive Chef.
Joyce, who was with Café Balaban from 1996 until early this year when the restaurant shut its doors, graduated from the Culinary Institute of America in Hyde Park, New York.
Joyce has helped Pfoodman develop its Wild Thymes menu as well as new menu items for Racanelli’s New York Pizzeria. He has also been instrumental in helping design the Horizon Point of Service software offered to Pfoodman’s food service clients.
